What is a scape? As hardneck garlic grows it produces a stalk that coils from the top called a ‘scape’ or ‘garlic flower’. Scapes can be harvested and used in cooking, stir fry, pickling or eaten raw. They taste like crunchy green bean with a mild garlic flavor. They can last up to 3-4 weeks in the refrigerator if sealed in baggies.
